Rice Pudding

Does anyone have a good recipe for Rice Pudding? I have had such a craving for it lately and yet I have never made it before!

Well - off the top of my head - from my childhood I remember my mother making delicious rice puddings. Don't ask me for measurements though, except the tin size.

One 370ml tin of evaporated milk.
Full cream milk
Sugar (Demerara is nice - but if not ordinary white sugar)
Rice (NOT long grain)
Nutmeg
Butter

Mix the evaporated and full cream milk together with the sugar.

Puy the dry rice in the bottom of a greased ovenproof dish and add the sugar. Pour the milk over - up to about 1" from the top. Add a nob of butter and grate some nutmeg over the top.

Put on the middle shelf of a pre heated oven (about 300°F - 150°C).

Stir carefully after about half an hour and then cook for anoth 30 mins...

My Mum used to add some dried dates or sultanas sometimes too.... YUM!

Raisins and cinnamon are great in and on this as well....................LOVE RICE PUDDING!!!!!!!!!!!!!!!!!

Well I can't wait to try it. I haven't had rice pudding since Jen was born and I really want some!

Don't care, when you look for comfort food you don't look or care about calories.
